Day 5...So, have you been making and baking as we blog along?  Up today...

I wonder what these two have in store for y'all today?

Is there one tradition that you have to do during the holiday season, something you can't live without?  Mine is eggnog...
  yummy, creamy, rich eggnog...and do you know what goes great with eggnog?? COOKIES!!!

This recipe came from my Mother-in-law and while I do an okay job with them, and they taste pretty much the same for some reason her's are better...and these Linzer Tarts go great with eggnog, so grab a mug and get to baking...almost a match made in heaven.

LINZER TARTS


           

1 cup butter   
2 eggs
1 cup sugar
1 tsp almond extract
3 cups flour
1 1/2  teaspoons baking powder
1 cup Raspberry Preserves (or flavor of your choice)
powdered sugar

Cream butter and sugar; blend in eggs, extract, flour, baking powder.  Mix well, chill batter for 1 hour or more.  Roll out quarter of mixture at a time; cut with round cookie cutter (scalloped edges are pretty); take half of circles and cut smaller holes in middle; bake 350 for 8 to 10 minutes; do not overbake you’ll want a soft cookie and they should look white, no browning.  Cool cookies completely on rack; put preserves on solid side of cookie, top with cookie with hole in the middle; sift powdered sugar on top.
Makes 32 cookies

  1. The one thing that we have to have and only have at Christmas is Peanut Butter Cup Cocoa! There is one reason why we have this only at Christmas because I'm positive you would surely die of the richness! It is simply the best!!! I have always wanted to try these cookies!

  4. I love eggnog too. My cousin used to make it every year, and I assumed she made it from scratch. She served it in a beautiful crystal bowl with dollops of whipped cream floating on top of it. Then one year, as I was swooning over my eggnog, she said, "Oh no, I don't "make" it. I just pour it out of the container into the bowl!" We all had a good laugh! I guess it was the presentation! Just like those beautiful mugs in your picture. I'd be swooning over one of those too! Thanks for sharing the Linzer Tart recipe. One of my favorite cookies.

  9. No one in my family likes eggnog but me. So I have my own tradition, a lovely carton, some whipped cream and a few moments of quiet in front of the tree on a few busy evenings before heading to bed.

  34. Ah, eggnog! In our family gatherings, I always serve eggnog, but only 3 of all 21 people will touch it! Hubbie says I should scrap it, but since it's only out once a year, NO GO! Can't wait to try the cookies with the eggnog!!

  40. My grandma used to make us a non-alcoholic eggnog for breakfast whenever we were visiting. Neither my momma, my sisters or I have ever been able to duplicate the wonderful flavor her's had.
